I successfully completed my third co-op at International Flavor and Fragrances. While I will reflect on this great experience when I have more time, I would like to take a moment to remind you of my great passion: brewing. In celebration of the holidays, I decided to brew kvass chlebowy , a bread-based low-content alcohol from Eastern Europe. The gist is that you boil pumpernickel bread and ferment the resulting water, yeast, and sugar for a few days. I fermented the kvass for four days and plan on bottling it in pressurized bottles with a little sugar to carbonate it.
